As far as I know the base edition of control and physical edition don't upgrade to ps5 so if Sony gave that it wouldn't have upgraded to PS5 only...

Yes, Remnant and FFVII will run on the PS5 in the backwards compatibility mode. The upgraded FFVII is an entirely separate PS5 version of the game.
